The first baking centre for industrial bakeries

Lesaffre is opening a new Baking Center™ in Vienna 100% dedicated to industrial bakeries.

Strategically located in the heart of Europe, its main mission is to provide technological assistance and advice to industrial bakeries in the development of new bakery products and production processes. The official opening took place on 9 April 2019 in the presence of Lesaffre Group CEO Antoine Baule.

Consultancy and services for industrial bakeries

The Baking Center in Vienna is the latest addition to the Lesaffre Group’s international network of more than 40 Baking Centers™ worldwide. It is the first baking centre that is 100% dedicated to industrial bakeries. It will reinforce Lesaffre’s position as an expert in the baking industry, while enhancing the level of service offered to its industrial customers. The opening of this bakery centre is an important event and an opportunity for the future development of the bakery sector in Europe.

In our new baking centre, which is a pilot project in the field of industrial baking, we offer our customers and partners the opportunity to carry out baking tests on our equipment, but in an environment that simulates their own production conditions and premises. Another advantage of the centre is that customers are not forced to interrupt their own production for testing, and we can also develop tailor-made products for them,” says Jérôme Lebriez, Lesaffre’s Managing Director for Central and Eastern Europe.

The Vienna Baking Center™ houses an ultra-modern industrial test bakery consisting of 4 zones: the dough preparation zone, the dough shaping zone, the dough rising and refrigeration zone and finally the baking zone. In addition, the bakery is equipped with a “laboratory” used to determine the properties of the final bakery products (durability, softness, texture, etc.). All this is spread over an area of 600 m².

The establishment of the Baking Center™ for industrial bakeries in Vienna is fully in line with the Lesaffre Group’s strategic priorities for innovation and customer service. In the Czech Republic, the Lesaffre Czech Republic, a. s. since 1999 and has been distributing baker’s yeast and other baking ingredients to industrial and artisan bakeries. It is also engaged in the production of yeasts, baking mixes and preparations. It provides technological service and consulting to bakeries in the Czech Republic. It has 2 Baking Center™ in Olomouc and Stara Boleslav. The newly established Vienna Baking Center™ will also be available to its customers from Czech industrial bakeries.
